Easy potato pancake brunch
Here is a super delicious, super easy brunch recipe that le chef cooked up for us this morning!!
Mix the leftover potatoes, (we used the insides of baked potatoes) flour and baking powder. If you have a potato ricer to mash up your potatoes first, this makes for a smoother pancake. Make a well in the middle, add the 2 eggs, milk, salt and pepper. Mix to form a batter. Fry the batter as you would fry pancakes ( a few minutes on each side until golden). In the meantime poach of scrambles your eggs. Serve with smoked salmon and some greenery. Enjoy!
